A cooking class in a pastry shop focused on two symbolic desserts of Sicilian cuisine, both based on sheep’s milk ricotta.
The King: the cannolo, with its crunchy shell and soft filling, created in a sultan of Caltanissetta’s harem, by his concubines who, wanting to recall the phallic memory of their king, invented this dessert that was handed down to us through the nuns convents.
His subjects: raviolini made with the same dough as the cannoli “scoccia” filled with ricotta and fried.
